In 2021, Pollo Tropical got themselves a liquor license. In South Florida, a fast casual restaurant with a liquor license is a rarity, especially when that said restaurant opts to mix and bottle their own cocktails.

Launch a new cocktail brand and packging system-wide that is unique and proprietary for the brand. Communicate and reinforce the brand essence to reflect the real authentic colorful Miami.
